Sweet Potato Pancakes

This is so easy, you can make it while holding a baby! (Every new mom's criteria). I used leftover sweet potato that I had previously prepared, and this is the ridiculously easy way I had "prepared" it:

I pricked a medium sweet potato with a fork, microwaved it for 4 minutes, let it cool slightly and mashed it with a dollop of coconut oil and a generous heaping of cinnamon. When adding the sweet potato to a fluffy vegan protein powder, it lends an incredible pancake texture.

In this pancake recipe, I used a 1/2 cup of the mashed sweet potato and threw together this recipe:

Sweet Potato Pancakes

yields 6 small ones (serves 1-2)

Ingredients:

1/2 cup mashed cooked sweet potato

2 eggs or 4 egg whites or vegan egg substitutes

1 scoop vegan protein powder (optional)

1 teaspoon baking powder (corn-free)

1/2 teaspoon cinnamon (use more if your potato is plain)

Optional frosting:

1 scoop vegan vanilla protein powder, water and cinnamon to taste.

Directions:

Puree in a food processor, and cook in a nonstick pan over medium heat, about 3 minutes per side.

Serve plain or with additional protein powder whisked with water and cinnamon and drizzle on top!
